Tuna Dijon Potato Salad
Eating well is easy with tuna. It's one of the healthiest foods to choose from, naturally low in fat, high in protein and a great source of Omega-3.

Ingredients:
2 (4.5 oz.) pouches StarKist Tuna Creations®, Herb & Garlic
1 1/2 lb. small yellow potatoes
1/2 lb. fresh green beans, trimmed
16 red cherry tomatoes, halved
1/4 cup extra virgin olive oil
2 tbsp. red wine vinegar
2 tbsp. Dijon mustard
2 tbsp. capers, drained
2 tbsp. chopped fresh oregano
4 cups field greens or baby lettuce
Directions:
Cook potatoes in boiling water for 15 to 20 minutes, until just tender. Drain and immediately cool under running cold water. Steam green beans in microwave until just tender, about 4 to 5 minutes. Cool immediately under running cold water or plunge in ice bath to cool. Cut potatoes in quarters and place in a large bowl. Add green beans, Tuna Creations® and tomatoes. Place olive oil in small bowl. Whisk in vinegar and mustard until thick and creamy. Whisk in capers and oregano. Pour dressing over salad and toss. Serve over field greens.
